    Smokers (BBQ - not grilling)

No. I refrigerate it, but start eating it right away. I agree that you don't need more than two hours of smoke. When I smoke cheese (it has been a few years) I smoke mozarella. I am not a chedar fan.

I have the tray. Mine has more than three channels. I also bought several of the different saw dusts when I got it. I have not tried using pellets in it.

I have the A-Maze-N that I use to smoke cheese with. You have to be careful. You can get too much smoke with it. If that happens the food tastes like an ash tray. 🤮

Definition of barbecue (Entry 1 of 2) transitive verb 1: to roast or broil (food, such as meat) on a rack or revolving spit over or before a source of heat (such as hot coals or a gas flame) barbecuing chicken for dinner...

New to me ST or new FJR?

Look at both, (if possible) test ride both, and make you decision.

From the choices I have around here I prefer the Smithfield, but I will be sure to keep an eye out for the Hatfield and give them a try if I come across them.

    Smokers (BBQ - not grilling)

I did a rack of (Smithfield) ribs over the weekend (no pics). I got lazy and just put the rack on the grill instead of splitting the rack in half and standing the two halves up in my rib rack.  I ran them 5 hours @ 250 degrees like I always do. I was disappointed in the look of the rack when it...

I like using the Alton Brown recipe as a base for jerky: https://altonbrown.com/recipes/homemade-beef-jerky/

    Ummmm, that's a 3/1 ratio, not a 4/1 ratio.

That is a thing of beauty!  What temp/time do you run for chicken?

Are you familiar with the cursive "e" or whip and pause techniques? A Mig Welding Technique From an Old Timer

MIG is easier to pick up than TIG. With MIG it is automatically supplying the filler material. With TIG you have to use your other hand to dip the rod into the puddle to add filler. Also with TIG you have to keep the tip of your electrode very close to the puddle (1/4ish" or less) without...

Yes. You can try concentrating on the square tube to get the base metal flowing, then drag the puddle over onto the thinner metal. It does take practice to get decent at welding thinner stuff to thicker stuff. That's why I have/use a TIG welder; I can get the base metal flowing without...

It looks like you aren't getting good penetration of the base metal on the square stock Fred. It should be okay for a project like this, but I wouldn't trust that weld to something critical like a trailer hitch or something that needs to hold pressure.

    Nice looking Fred!

    End of an ERA

The FJR does have a  forward lean position. It is also top heavy. I would find one to test ride before buying one.
