    I have a Nesco Professional 600 watt dehydrator and it will run at 160 F, jerky only takes it 4 hours.   Of course there’s no smoky flavor. 😉 I’ve been using ground meat lately instead of slicing up whole hunks. Have a “jerky gun” that extrudes the meat into 2 inch wide by 1/4” thick slabs.

    Yes, you shouldn’t “partially cook” chicken. If you plan to eat it later you should still cook it to 165 and then just heat it up later.

    I never crutch ribs. They usually don’t cook long enough for that to be of any use, (unless as you said, you want them tender) I find “tender” to really mean  “mushy”.  Baby backs I cook for about 4-1/2 hours. St Louis ribs closer to 6, but I mop/spray them for the last 2-3 hours.

    Got my new gas grill assembled. Was  pretty straight forward, instructions easy to follow...  So far, grilled up some chicken breasts, some Jalapeño brats, and some hot dogs.   Heats up quickly, controls work great. Burners are closer to the food grate than the other grill, so “HI” will work...

    Our deck at the other house caused us to lower the tub in with a 100 ft crane. 😳   Our deck here is just over 9 feet high at it’s  shortest point.  Crane won’t work here because of narrow rock driveway with drop off and power lines.    Problem we’ll hopefully solve when we get back.

    Have a relative with a cabin on the shore in Olympia. Real nice place to visit, couldn’t say what it’s like to live there however.     My daughter lives on the east side of the state In Kennewick.  So, west very pretty. East, not as pretty, but nice wineries.😉
