The only possible answers to his first instruction (think of a two digit number, and subtract the sum of the digits) are multiples of nine (9, 18, 27, 36, 45, 54, 63, 72, 81 in this case). These numbers all ways have the same symbol associated with them on the chart, even though ever other symbol can be random to throw it off visually. The crystal ball will always display whatever symbol the chart has for 9, or any of it's multiples.
Go back and see for yourself.

Yeah, well it got 9/10 wrong and I was even using a calculator! Only one it got right was 91.
That's because you have to follow the directions: "Choose any two digit number..."
910 or 109 are both three digit numbers.
