I'm not quite sure what this is, but it sure looks tasty!

If you keep this up I'm going to ride out your way for dinner.

Papa Chuy Viejo's Tried and True Queso Fundido Recipe:

Ingredients

Vegetable oil can be used, but Papa prefers bacon grease for oiling the baking dish (if you eat this once a week, you'll get a heart attack anyway!)

6 ounces chorizo, casings removed

1/4 cup chopped onion

1 large clove garlic, minced

2 cups grated Oaxaca Queso

6 flour tortillas, warmed (this is if you're a Gringo, we Irish-Mexicans prefer corn tortillas!)

Directions

Preheat the oven to 425 degrees F. Oil a 3 or 4 cup ovenproof baking dish.

In a dry medium skillet, saute the chorizo over medium-high heat until almost crisp. Remove the chorizo to a plate. Add the onions and garlic to the pan juices and cook until soft, about 5 minutes. Return the chorizo to the skillet with the onions and garlic and stir to combine.

Put half of the cheese in the baking dish and sprinkle with half of the chorizo mixture. Repeat with the remaining cheese and chorizo mixture. Bake until the cheese is bubbling, about 20 minutes. Serve with flour (corn, ese!) tortillas for soft tacos. Eat this weekly, you'll be a fat Chollo like HotRodZilla!

Shit...If I ate that once a month I'd be fatter than I am. That's close to the other recipes I've seen, and it is dammed good. Some chopped green chile makes it even better. Yum!

Sautéing the onion and garlic in the chorizo grease is a good idea.

I donno how some of you guys are happy with food without ever having eaten green chile, red chile, chorizo, Menudo, Posole, quesadillas, chile rellenos, tequila, tacos al pastor, juevos rancheros, and fresh salsa...

Uh mi Compadre Fred, I am aware that "magic mushrooms" are popping up all over Wenatchee because of the recent rains but Dude you really need to restrain yourself! jes' sayin' and nuff said!
