C'mon you guys... Fried chicken & fried catfish for Saturdays banquet? Really? WTF! I am hoping that there are folks who vote differently & really soon.
Fried apples are also way out front for a side dish. :lol:

Why would anyone fry an apple? :eek:

Thank Goodness that FJR Forum Dogpile Friday has finally arrived, so I can fully comment openly on catfish. Catfish tastes just like *****, that's why Papa Chuy Viejo loves catfish and always orders it! jes' sayin' and nuff' said!

CatFish tastes like mud. I've tried it multiple times over the years thinking I just haven't had good cat fish.

I see folks at the next table just chowing down on it and can't understand how. I do notice they use a

ton on Texas Pete's hot sauce on it. Maybe to kill the mud taste. I'd suggest you don't vote for it just

because you never had it. But if you do make sure they have Texas Pete's. No affiliation with Texas Pete.

OTOH, I've never eaten mud so perhaps I just don't recognize that particular flavour ;)

As a norm I avoid fried foods for the most part but this looks to be turning out as "Heart Attack on a Plate" night.

Wayne, are the vegetarians amongst us destined to eat sides or is there a special menu for them?

& Geez, actually fried apples are pretty good. I know it sounds kinda' gross... but they're usually quite tasty & don't look fried at all.

Nope. Apples are eaten either as they come from the tree, or baked in a pie. Maybe apple sauce. ;)

I knew that was coming. Yeah as a boy I probably tasted just about everything and moving around a lot

I had to try them all over again just to make sure it wasn't different there.

Mud does come in many different flavors. I should of been more specific.

Catfish tastes like brown river mud the kind with some clay mixed in with it.

Fried apples have a similar consistency to the apples in apple pie. They should also contain cinnamon when made. They are best (IMO) with vanilla ice cream. Let me put it to you this way... would you rather have fried okra than fried apples? lol my northern friend!

Hi Mike, I'm aware of where Virginia falls on the east coast. I've been here since '81, too. I guess that I should also note that I'm originally from Jersey. No matter how long I've been here I still don't/won't eat Okra. I will eat fried apples over okra any day.

& that's a good point about Bambi... lol! Funny stuff!

 
Hey!! I like Fried Apples (and voted for 'em) and I'm norther-er than Geezer.

But I have to say this picture of Geezer in his yoot' is kind'a funny.


Oh, and for the fiddles, I'll take a Stradivarius... :p

(I also love Texas Pete's, though not in a biblical sense...)

I will be speaking to Cumberland Falls on other business Monday afternoon. I will inquire. In the mean time, help me out here - How many non-"heart attack on a plate" members are we talking about (1, 5, 22???). Please PM me if you fall into this food preference.

I'm out of town for the weekend; poaching McD's wifi from a bait shop parking lot while my dad gets catfish bait. I grew up on fresh fish; so fish in a restaurant typically does not get me fired up; however, the bass and bluegill fillets back in the cooler that are going in the pan tonight are another story...

Sharon, my favorite recipe: Catfish Saint James!

Prep Time: 8 Hours 20 Minutes

Cook Time: 25 Minutes

Ready In: 8 Hours 45 Minutes

Servings: 4

"This rich and flavorful baked catfish dish is packed with savory flavors. Parmesan, mustard, garlic and onion all compete to thrill your senses."

INGREDIENTS:

4 (8 ounce) fillets catfish

1 (12 fluid ounce) can evaporated milk

1 1/2 cups all-purpose flour

1/2 cup grated Parmesan cheese

1 tablespoon Italian seasoning

2 teaspoons baking powder

1 tablespoon garlic powder

1 tablespoon ground dry mustard

1 tablespoon onion powder

salt and pepper to taste

1 cup butter, melted

DIRECTIONS:

1. Wash and dry catfish filets. Place filets in a shallow dish and pour milk over them. Cover and refrigerate for 6 hours or overnight.

2. Preheat oven to 400 degrees F (200 degrees C). In a large mixing bowl, combine flour, cheese, Italian seasoning, baking powder, garlic powder, dry mustard, onion powder, salt and pepper. Dredge filets in flour mixture.

3. Lightly grease a rimmed baking sheet and place coated filets in pan. Drizzle melted butter over filets.

4. Bake in preheated oven for 25 minutes, or until firm and flaky. Serve hot.
