HUGE PROPS to Neil San Diego!!!!!

Neil and Janet delivered to me, from the jewel of SoCal (San Diego) to my hood in Tustin, a bunch of Elk meat, ground meat and sirloin steaks. This evening we had Elk burgers, OMG it was bloody fantastic!

I looked up online elk burger recipes. Most sites said they can get dry if over cooked and are so lean they may not hold a patty shape well. I also know it could taste gamey depending on what the elk are eating. So, here's what I did. FJRBluesman winged Elk burger recipe.

1 medium onion (one half chopped, one half sliced)

1 clove garlic

8 mushrooms sliced

1 pound ground Elk meat.

Infused olive oil (I don't think this matters that much, just extra virgin olive oil should work, but…. we had some gourmet olive oil infused with Garlic, Arbol chili, parsley, basil, thyme, oregano, orange zest, black pepper corns, canola oil, and extra virgin olive oil)

I sautéed and caramelized one half medium onion, chopped, and one glove garlic in the infused olive oil (FYI, I love olive oil).

Sautéed the other half onion sliced with mushrooms in infused olive oil. Set this aside for topping of burger.

Folded in caramelized chopped onion into meat along with about 2 table spoons of Montreal Steak seasoning (from Costco), mix by hand well. Let sit for at least a couple hours.

Since the burgers may not hold their shape, I fried them (instead of BBQing them) in the infused olive oil. I cooked them on high heat to give them a crisp blackened crust, about medium, or to medium well done. Cook it the way you like it.

Then spoon on the caramelized sliced onions and mushrooms garnish to your liking. I'm not sure how it will taste with cheese, we did not have it that way.

These were absolutely excellent burgers. Extremely lean and healthy.

I can't wait for my left over elk burger lunch tomorrow. Mmmm. Thanks Neil and Janet!

Elk is a true treat and considered a major bit of good luck to get a tag and bag one up here; congrats on having such good friends! :clapping:

IMHO, anybody who turns their nose up at the thought of eating elk has scored low points in my culinary style points scale. ;)

WOW!! How ironic is that. I thawed out 3 elk steaks this morning. They were given to me from a friend in Murrietta. I messed them up though, I grilled them to long and they over cooked. My friend warned me that it would cook a little fast. I guess I didn't listen to good. He served me some elk at his home about two years ago, and I've been hooked ever since. I just cant cook it as good as his wife though. He also gave me some ground elk. I'm not sure what to make with it. I thought about stuffed bell peppers, but maybe I will try your burger recipe. I never thought something running loose in the forest could taste sooo!! good. It's good to have friends with elk meat. By the way did you grill it all, or did you freeze some for later?

Haven't had any of that in a couple a years.. Near impossible to get into the lottery draw for a permit/license here.

Good thing about Michigan is the overabundance of wild game. I've ate a bit of everything and liked it with the exception of Bear. That **** is just nasty :blink:

I think over the years I have tried most wild game.... I believe that Elk meat is the best with Moose close behind.... It is a very special friend that will the share the results of his successful hunt... Congrats. Rich

Glad you liked it! And that recipe sounds fantastic, I'll be passing that along to Janet. She's a garlic and olive oil fiend also...
