handle material will be different, but Ironwood handles with stainless steel pins will cost about $75.00

I don’t think it’s a much being sharp as it just seems to slice through stuff so well. Likely just the thin blade and hollow grind.

I have a sushi knife you can shave with but she doesn’t like the handle.

   This blade was a bargain for what it was. Many sites sell 440C blades I wouldn’t even think about using. There are some nice Damascus and Carbon/Tool steel blades that I would consider, but most of them are charging 70-$80 just for the blade, meaning we would be talking $160 to $200 for a finished knife.

   I have no problem making such a knife. If anyone has no qualms spending that kind of money, I’m sure I can find something you’d be proud to own. 😉

 
Word from my supplier is they have discontinued the chefs knife blade. Looks like I got the last two that were left. This is sad, as they were one of the best I’ve seen for the price. I’ve made about a dozen of them, some for professional chefs, and they all thought they were great.So, it looks like I’ll have to find a suitable replacement. I’meying some Damascus blades and some old school ones using tool steel. I’ll post up later next month the possible options I come up with. As stated before, these will likely be about twice the price from what I’ve seen so far.  Again I’m sorry for those interested in the original blade as it looks like they will not be available any longer.Hindsight being 20/20, I should have started buying them up 20 years ago. It does look like the fillet knives are still being produced, and perhaps a 9” slicer from the same producer. So, will get back to those who were interested with some other options later.Sorry.

 
Supply is what supply is. Bummer that it happened but, if I know my FJR Forum members, "adapt and overcome" is reflexive by now.

 
I got mine in the mail today. Glad I got in for one of the last two. It's a work of art that will see a lot of use. I'll be able to start trashing some of the junk knives while she isn't looking.

If your She is anything like my She was, I would suggest hiding them before finally trashing them. Just in case of the "Where's my favourite knife gone?" interminable and increasingly angry questioning. (This can continue for weeks, with the level of “favourite" and anger rising the longer it's missing, and will never be forgotten)

 
AND, if she is used to dull/stamped blades, she may balk at a nice one. I know my mom and my wife both complained when I went through and sharpened everything. They were so used to forcing dull blades that they didn't know how dangerous it could be.

 
I guess if there is any advantage to my wife's declining cognitive functions, she doesn't remember much from one minute to the next so I can lie about what happened to stuff and get away with it. We used to have about 30 coffee cups for two people and now there is just a handful left, same with lots of other stuff.

Now I've got a case of knife envy for my own blade!  Love the highlights in the Bubinga handle.
