Gel pepper spray-- cool! But won't that mess up the consistency of the cheese on your taco? Spray works good.
Never used gel, always used the stream spray type. Hosed up to 4 people at once, maybe 12 or 15 total over the years, with DoRight, and it never failed me. It did take about 15 seconds to affect a meth head who was tweekein' one time (and 3 of us to gain control of HER (5'5, 135lbs), without injury-- otherwise it stopped them in their tracks and made them do right.
Carrying pepper spray in Missouri is not illegal. If you use it, don't warn the assailant, just pull it and shoot. In the force continuim (sp?) it is considered less force than placing hands on and causing pain for control.
Don't just do a couple of seconds (like cops are trained to do... you don't have to play by any department rules) do 4 or 5, and then a couple more if he hasn't had a Come to Jesus Moment. DoRight (AKA Liquid Jesus) is not expensive; apply liberally.
It beats hell out of having to take a shot at somebody, because some people aren't afraid of a gun because they think you don't have the balls to use it. If you don't, bring a lubricant with the gun... it makes it easier to extract it from your ass.
I won't address the CCW issue--it's not considered a weapon here. I find it hard to believe any prosecuting attorney would go after a citizen for defending himself without force, much less simply carrying the spray. MOST cops will look the other way unless you are being a problem child for some reason.
Bottom line if faced with a threat: run like hell. If you can't run, fight like hell. Start with the spray to get their attention and adjust their attitude so they can see the error of their ways.
