I use a "bridge" camera, a Fujifilm Finepix S100FS. This has the weight and bulk of some SLRs. I simply put mine in a padded camera bag, I chose one that's a tight fit so bits don't rattle around inside. I then "throw" my camera, in its bag, into my pannier or tank-bag. The latter is very convenient, I can stop, unzip the tank-bag, unzip the top of the camera bag and just take out the camera.
The bag is a Loweprow, lots of nice pockets and stuff, shower proof as is, but has a built-in rain cover as well.

I use a Fuji Bridge camera too when I know I am going to take some nice pics. I use a Fuji HS25 in a tamrac bag that goes in one of the bags. If I think I might take a pic, I take an older Panasonic Lumix PnS. Both take great pictures. I sold my Canon DSLR gear since I just wasn't using it.

 
I shoot with a Nikon D7100 SLR and carry it in the tank bag. Works fine, and I can shoot on the run, but I have seen Madmike2 throw his camera off his bike, so I'm careful. Puppychow:

"Bridge camera"? So that's what them things are called.

I have an Oympus SP-something or rather with an extra set of Li-Ion batteries and a couple extra memory cards in a Lowepro case. When I get my bike, it will go into the tank bag.

Good little camera. Up - uses AA batteries, down - D, not SD, memory cards.

 
I took pictures for this Motorcyclist article with a GoPro mounted on a Chesty (the frontpice shot) and a Sony mirroriess NEX-6 with two lenses: 55 mm - 210 mm f/4.5 - 6.3 Zoom and the kit lens, the 16-50mm SELP-1650 E-mount Power Zoom. Overll, it's great for my tank bag. I even took some shots with the camera around my neck while I drove (kids, don't try this at home).

I put my Nikon and my wide angle lens with cp and cokin filters in my well padded camera bag and put in top case. bungee my tripod on back seat area. works well and I can get most of the shots I want.

 
Nikon D5100, lenses, spare batteries, and the Canon HF G10 fit in a Pelican case. I just installed Garauld's rear subframe reinforcement bracket, and already had one of his small racks. I'll strap the tripod in it's case just ahead of the pelican.

Gonna take a lot of photos this year :)

For the 'in motion' shots, I have one of those mini video helmet cams. Doesn't take the best quality, but really not too bad for what it is.

 
I only take my dslr on long trips, otherwise I just use my iPad mini for day trips and such.

When slabbing it to a trip destination, I put my dslr and lenses in the saddlebag with all the clothes. Once there, the saddlebags come off, and I put my camera and whatever lenses I want, in my tail bag. The tail bag sits on the seat, which is cushion underneath and that seems good enough. Haven't had any problems with this. I don't have a small tripod, so I push the ISO up to compensate. I mainly use my wide angle tele, and my 85-200 also comes along, but doesn't get as much use. I use a Canon 5D MK II.
