Are the racks one size fits all? If I have a trunk and someone else's bike has a rack but no trunk, can I be certain my trunk will fit on the rack?

No, there are two GIVI racks, one for GEN I and one for GEN II. There are also two types of mount plates too. I have the Monokey line of top box.

Yes you can be certain that your trunk will fit the rack, but you cannot be certain that the rack will fit your bike, because the racks are specific to each bike model.
So the topcases are one-size-fits-all, in that any Monokey topcase fits any Monokey toprack, but the racks are bike-specific.

For monokey Givi top case in Gen II, you need the SR357. For Gen I's, I beleive they are rhe SR356. Best US place to order is Twisted Throttle, or 2nd Gear (ebay) which is better for Canadian order.
