Has there been many documented cases (no pun intended) in the saddle bags coming off? I've ridden many miles over all kinds of terrain and haven't had an issue.

I can tell you that one of the 09 IBR Deer strikes took the saddlebag clean off. The rider was able to keep the bike upright and continued the rally. This rider normally pins his bags and had left them out. He was glad he didn't have them pinned as the results probably would've been much different.
