For those that have tried to stay on a low carb diet...
It's not easy. Finding inexpensive low carb stuff is a beee atch.
Here's something that works well for me, and if u like spicey stuff, you'll prob like it too!!
We start with a low carb tortilla, many co's make these, mine are from Ole' and about 5 grams per...
before we use that tortilla, heat it about 20 secs on high to get it a bit firm so it will wrap well.
this pic shows all the ingredients, 1 slice bacon, 1 egg, some tones red pepper and garlic / pepper, some 'La Victoria' HOT salsa brava (very thick, not runny), shredded parmesan cheese and a previously prepared bag of finely chopped up onions and jaaa lop en ooo's
so heat the tortilla for about 20 secs on high, as mentioned. throw another paper towel on top of the bacon (soak up the grease) and do it for 2 mins at 70% power. That brings us to the egg. I put a lot !!! of jalepenos mixed in with the onions... I'm a spicey freak
Mix the egg and nuke for about 50 ses on high. Don't want to over do this.
So far, our bacon, eggs, and tortilla should be about ready ...
Now get everything on the Tortilla ready to be wraped; egg, bacon, salsa, crused red pepper and black pepper / garlic, grated cheese...
Some of us may not know how to properly wrap a tortilla... hey I had to look it up! (google) No shame!
But after wrapping and then nuking on high for 20 secs... this is what we get:
and a closer view show how tightly wrapped it can be
I luv burritos
and guessing of course, but total carbs has to be about 8 or so, not really bad at all.
Just really like them a lot, so thought maybe others might also
Happy Holidays.
