Last time I went out, I was packin' some Kashi Go Lean nutritional rolls. 20 bucks for a box of 24 at Costco (luv that place). They seemed to do pretty good, and not too hard to get past my helmet, but I gotta remember to pre-open the little packages next time, as they are too challenging to open safely underway. I also downed (yes, I chewed it, you pervs) a banana at each fuel stop.

What else works well for you, when time is of the essence?

Actually, as a result of my medical condition, I have for a while carried home made Ritz and peanut butter sandwiches. They have a lotta carbs, and make for a fast pick-me-up. Wife makes them for my longer trips, and they store for days in the tank bag in a Glad plastic tub container. Easy to open and consume while riding, no stopping or even slowing.

I don't eat or drink while rolling, but when I stop for fuel I like a few bites of cheese and a water bottle. I can fuel up the bike and myself in less than 10 minutes if they have pay-at-the-pump.

I learned that the desert southwest of the US doesn't like you very much if you wait for a fueling stop to grab some water. There's no way to keep ahead of dehydration that way. Instead I have installed some way to be able to sip water while riding as the body is better able to absorb small, continual doses than a huge, sporadic indulgance.

As for snack, I prefer Cliff bars over power bars as they don't melt to goo in summer heat. For protein, beef jerky not only sustains but entertains. You can keep yourself busy for miles afterwards by trying to get the bits out from between your teeth. Your tongue will thank you.

Nutri Grain Cereal Bars.

Nature Valley Crunchy Granola Bars

Got the water in my Camelback to wash it down.

btw - i also learned after the 1st trip to pre-open the packages.

Trail mix. Trader Joe's has various selections that don't include chocolate, for warmer weather rides. The bigger bags can be pre-packed into small zip-lock baggies before the trip, then pulled out at each gas/rest/photo stop.

Water is in the CamelBak.

What's wrong with M&M's and a Diet Soda at fuel stops?? (OK...I'm being a trouble maker)

Stop, go into a restaurant and relax. What's the fun in being in a hurry?

The ride I have planned doesn't even leave time to take a dump once the flag drops. They don't call it endurance riding for nuthin'. A fifteen-minute stop or a time-out collecting a performance award will probably be a deal breaker. It may not be doable at all, but I'll have to try it myself before admitting defeat.

If you look at it like a Rorschach blot, it kinda looks to me like the big bad wolf, like in the right side of this one:
