I noticed one missing on my used 2005 so I went to tighten the rest and broke one. I was shocked to find out they were plastic. Can they be replace with steel?

MM2, really? Or was this a misread on your part? Hugs n' KissesYup, been done many times. I'd suggest stainless steel (Available at most True Value-Ace hardware-Home Depot-Lowes, etc.) since exposure to water will likely produce unsightly rust.
Never happened before. In fact, it's been demonstrated multiple times to stay intact even with a bird strike at a buck plus. No reason to think it should come off.I guess my next question would be...if you are riding along a 65 mph and hit a bird is the windshield going to end up coming off into your face?

However, if you take a header off the bike....the windshieldcome off nicely as demonstrated several forum members and not one jugular has been severed.
Those Yamaha engineers are bright folks. They're designed that way for a reason.....and only real problems seems to be misunderstanding when people over torque them and snap them off.
This has all been discussed many, Many, MANY, [SIZE=18pt]MANY[/SIZE] times before including this thread.
