Well, it is West Virginia, so...

The hotel called for meal choice today - going to request this poll be closed.

Here is where we stand on the salad selection:

Garden Caesar Greek Pasta 20 17 9 10
Inquiring minds do want to know, is this going to be a REAL Caesar Salad with salted anchovie fillets and raw egg yolks; or, is this going to be a fecking Gringo Salad! Chu doesn't do Gringo, ese!

Chop together anchovy fillets, garlic, and pinch of salt. Use the side of a knife blade to mash into a paste, then scrape into a medium bowl. Whisk in egg yolks, 2 Tbsp. lemon juice, and mustard.

All right here is a True Fact for you: Do you know where I have had the best Caesar Salad I have ever eaten and who the Chef was?

Bear in mind I have had Caesar's from Cancun to Caborca and Morelia to Mazatlan; plus in Spain, Portugal and the Basque Lands!

The best Caesar Salad I've ever tasted was prepared by Admin Greg "SkooterG" Marbach at GS Jane's home in Scottsdale, Arizona.

Jane told Miss Donna and I that SkootyG was in charge of the Salads for our get together dinner; his Caesar is too die for! Es Verdad!

Here is the Recipe that Caesars' Restaurant in downtown Tijuana, Mexico has used since the 1920s; GreggieM must start from here:

Nuestra versión de la original ensalada Caesar’s porción para 4 personas

  • 20 pzas. hoja lechuga romana
  • 200 gms. taza de aceite de oliva extra virgen
  • 20 gms. de salsa Perrins
  • 15 gms. mostaza Dijon
  • 15 gms. de ajo triturado
  • 1 yema de huevo
  • 15 gms. de limón verde (jugo)
  • 3 gms.pimienta negra
  • 35 gms. queso parmesano
  • 4 pzas. croutones
  • 40 gms. Anchoas

Believe Greg uses a recipe from Caesar's en Tijiuana as a base only, because his Salad is even better than the Original; think he uses a "Secret Sauce"!
