10 lbs of boneless pork goodness on the drum smoker at 8AM

This will be starring in some smoked pork tacos for the son's night before wedding (aka rehearsal?) dinner on Friday.

Followup on yesterday's pulled pork efforts:

Cooking along on the Ugly Drum. Went "low tech" for this cook and only paid attention to the analog gauge at rack height. Used Stubbs' charcoal and some hickory wood chunks.

The boneless butts were each a bit over 3 lbs and they were cooked to perfection in only about 11 hours with the pit running between 225 and 300F. Came out great!

Last night was the party. About 25 of son and his bride's friends and immediate family. We had the pulled pork mixed with some grilled veggie in soft taco shells along with some Dirty rice and beans and greens. I would never have thought of using the pork in tacos, that was the bride's idea, and it really worked. Will definitely do that again.

 
Down in Bogalusa LA. Brought 2 racks of ribs with us we got heating up. Waiting for the hurricane siting on the front porch...

So a Mexican salsa would most likely not go on the tacos I am guessing. I can see adding a hot sauce but I wonder if you

made another concoction to add to the tacos? Curious!

Any opinions? Anyone here actually use one, or tried one, hated it, and would not waste your money, or love it??
$300 seems like a lot, for what that is...maybe $100 in materials there. I'm sure you can do better than that, for the money.

 
18" is a 30 gallon drum. Weak sauce. Not big enough for the money. The size isn't so much to get more meat on, more to get space between the heat source and the meat.

Get a 55 gallon drum, that's 22" diameter, same as a big Weber kettle, but much more vertical space. Look back to earlier in this thread where I show you how to make a nice 55 gal. vertical drum for about $50. $100 if you want the domed lid.

For the same money as that little Pit Barrel you could have a full size Weber Smokey Mountain, which is also 22" diameter, but is a well made, easy to use, big bullet smoker.

Yep. Birthday present. Hurricane was a no show for us in Bogalusa...it went east. We were down there for the Cruise the Coast car thing, which was spead along Gulfport - Biloxi - and Eastern Mississippi on the Coast. Biloxi, points east, and Alabama got the worst of Hurricane Nate. No photos of the ribs we brought down packed in dry ice. .they got gobbled down quickly.

Will be smoking 2 dozen brats this Saturday for our annual Oktoberfest...
